Agency Chefs

There are some excellent agency chefs, but this is the story of one who turned out to be neither chef nor cook.

It was Wednesday and we had a large function coming on the Saturday, plus a full hotel with a residential conference. The head chef asked if I could get him a chef to help out for the weekend, as one of his assistant chefs was in hospital having a minor operation. I called the local employment agency to request a good chef to help us out for at least three days. About an hour later, they phoned back saying they had an experienced chef who was free to come and help.

He arrived on the Friday morning, looking immaculate, and the head chef left him working with the team preparing the vegetables and starters for the day. All appeared to be going well.

The problem started about six o’clock the next evening, when a very agitated head chef called me down to the kitchen.

I arrived at his office and he took me into the cold room preparation area, where I stood with him and watched in amazement. There were 150 small plates with a bed of lettuce on them, each with two half boiled eggs placed neatly in the middle, onto which this so-called chef was carefully pouring custard. He explained that he was told to make 150 individual egg custards.

After the head chef had cooled down, the man explained he had just got it mixed up with egg mayonnaise. A simple mistake anyone could make… anyone who wasn’t a cook!
